ICED COFFEE WITH ORANGE (SUMMER SIPPER)

Your regular Iced Coffee with a tangy twist.
This drink can  be consumed in summers as well as winters.



Serves - 6

Ingredients

  • Water    - 1 cup
  • oranges - 2
  • Sugar   - 1/2 cup
  • Black strong instant coffee - 4 cups
  • Thin cream - 1/2cup
  • Whipped cream (for topping)

Method

  1. Place in saucepan - 1 cup of water, grated rind of orange(dry) - Boil and simmer (10 minutes)
  2. Remove from heat and add sugar. Stir until dissolved.
  3. Prepare black strong coffee, cool down. 
  4. Add Orange rind mixture and chill untill very cold.
  5. When ready to serve, add 1.2 cup of thin cream, strained juice of two oranges.
  6. Serve in tall glass and top with whipped cream.

ICED TEA PUNCH (SUMMER SIPPER)

Cool yourself in this hot summer with Iced tea punch. Adding a new twist to Iced tea, Iced tea punch is new, and refreshing to your taste pallet.


Servings    -    24(adjust ingredients according to need)

Ingredients

  • Strong tea     - 2 cups
  • Water          -  2 cups
  • sugar            - 2 cups
  • Lemons        - 4
  • Oranges        - 4
  • Cherry juice    - 2 cups
  • Crushed Pineapple  - 1 cup
  • Carbonated beverage    - 1 quart
  • Ice                               - 1 quart

Method

  1. Prepare and let cool 2 cups of strong tea
  2. Place in saucepan - 2 cups water and 2 cups sugar (to make sugar syrup)
  3. Heat Slowly while stirring the mixture, for 10 minutes.
  4. Add tea to sugar mixture and let it cool
  5. Wash squeeze and strain juice from 4 lemons and 4 oranges. add to tea mixture
  6. Blend in 2 cups of cherry juice, 1 cup crushed pineapple, 1 quart carbonated beverage and 1 quarter ice.
  7. Pour into jugs, and keep cool.

HONEY COFFEE MOUSSE


Serves - 2
Ingredients 

  • Honey   - 1/2 cup
  • Gelatin  - 1/2tsp
  • Cold water  - 2tbsp
  • Strong coffee - 1/2cup
  • Cream Whipped  - 1cup
  • Nutmeg powder

Method
  1. Soak gelatin in cold water for 5 minutes
  2. Dissolve gelatin in hot coffee and add honey
  3. wait for the solution to cool down, while stirring the mixture till it has thickened.
  4. Beat the solution until foamy.
  5. fold in whipped cream
  6. Turn into a souffle dish.
  7. Freeze until it is firm (takes about 2 - 3 hours)
  8. Serve cold.

Tip: Gelatin needs to be soaked for atleast 5 minutes.
Tip: you can even use grated white chocolate as a garnish. (tip credit goes to Ati Kumar)

PAPAYA - MANGO SMOOTHIE


Ingredients

  • Papaya puree   - 1 tea cup
  • Mango Pulp  -     1 tea cup
  • Sugar               - 1 tbsp
  • Lemon Juice      -  1tsp
  • Crushed Ice

Method
  • Blend all ingredients except ice into a blender/mixer.
  • Pour into glass full of crushed ice.



ORGANIC GREEN SALAD


Ingredients

  • Iceberg lettuce broken into pieces - 60gms
  • asparagus with blanched tip  -  5
  • Water chasenut -  4 - 5 bulbs
  • Black olives  - 5
  • Green olives - 5
  • Cherry tomato - 5
  • Feta cheese - 30 gms
  • Parmesan Cheese  - 1tbsp
  • Pesto dressing - 2tbsp
  • Basil leaves - 50gms
  • Parsley - 50gms
  • Olive Oil - 30ml
  • Salt to taste
  • Pepper to taste
  • Red chilli flakes to taste
For Pesto dressing Mix and crush the following in a blender -
  • basil leaves
  • Parsley
  • Olive oil
  • Salt 
  • Pepper
  • chilli flakes
  • Peanuts(crushed)

Method
  1. Take 1tbsp of pesto dressing and mix it with crispy iceberg lettuce.
  2. Arrange it on a plate.
  3. Take a bowl and mix it seperately asparagus, water chasenut, black olives, green olives, cherry tomatoes, Feta cheese and 1 tbsp of pesto dressing.
  4. Arrange it over iceberg lettuce on the plate.
  5. Sprinkle Parmesan cheese over it and serve.


Tip: Put Lettuce in ice water to keep it crispy.
Tip: You could add smoked chicken to the salad while tossing as well.

ARTYPEGGIO PIZZA


Ingredients

  • Pizza base (20cm) - 1
  • Aubergine thick slices 1/2 cm quartered  - 4
  • Garlic  - 1tbsp
  • Sundried tomatoes   - 7 - 8 pieces 
  • Capers  - 10 - 12 peices
  • Mozarella cheese, grated  - 100gms
  • Parsley , chopped. - a little

Method
  1. Brush the aubergine slices with olive oil and garlic on both sides,
  2. Put on a greased tray and bake in a preheated over for 2 minutes at 250C
  3. Place pizza base in a greased baking tray
  4. Pick with a fork to prevent it from rising in the oven.
  5. Spread the sauce on the Pizza, leave 1/2cm crust around the edge
  6. Sprinkle 3/4th of the cheese on the sauce, spreading it evenly.
  7. Place roasted auberfine slices, sundried tomatoes and capers over the cheese.
  8. Sprinkle the remaining cheese over the toppings.
  9. Place pizza in the middle of the rack in a pre heated oven and bake for 5 - 7 minutes, till the base is crisp and the cheese has melted.
  10. Remove pizza from over and cut into 6 peices. 
  11. arrange Pieces on a wooden board/serving dish
  12. Serve with chili flakes and oregano

Queen Margherita



Ingredients

  • Pizza Base (20cm)    -   1
  • Oil
  • Pizza Sauce
  • Mozzarella Cheese grated - 100gms
  • Tomatoes sliced   - 6 
  • Basil Leaves    - 3 - 4

Method

  1. Place the pizza base in a greased baking tray
  2. Pick with a fork to prevent it from rising in the oven.
  3. Spread the Pizza sauce evenly on the pizza base, leaving 1/2 cm crust around the edge.
  4. Sprinkle 3/4th of the cheese over the sauce
  5. Place sliced tomatoes over cheese
  6. Cut the basil leaves into narrow strips and sprinkle evenly over the pizza
  7. Sprinkle with the remaining cheese
  8. Place the Pizza on the middle rack of the pre heated oven (250C)
  9. bake till base is crisp and the cheese melts

Does temperature of drinking water affect health?

Yes, the temperature of the water you drink is important for maintaining normal health.
Cold water from natural sources (which is not cooled in a refrigerator or with ice) is fit for drinking because of the following reasons -

=> It lowers the body temperature
=> It dilutes the blood, to the required consistency
=> promotes excretion of poisons from the skin in the form of evaporation
=> stimulates the normal function of the kidneys and therefore increases the rate of removal of poisons from the body through the urine.
=> increase movements of the intestines, thus facilitating formation and passing of soft stool

TASTY TOPPINGS REGATTA PIZZA


Ingredients

  • Hot dog rolls/brown bread buns   - 6
  • Butter                                          - 1tbsp
  • Red tomatoes                              - 500gms
  • Onions chopped                          - 3
  • Crushed garlic                             - 3 cloves
  • Sugar                                          - 1tsp
  • Chilli powder                              - 1/2 tsp
  • Oregano                                      - 2 pinches
  • Oil                                              - 1 tbsp
For toppings
  • Capsicum sliced - 1
  • grated cheese - 3 tbsp
  • lineup of bread boats
  • fill with topping of choice (refer to me for advice incase you have nothing in mind)
Method
  1. slit each roll horizontally.
  2. Butter lightly 
  3. Put the tomatoes in hot water for a few minutes (blanch)
  4. Skin and chop the tomatoes
  5. Heat the oil and add onion + garlic
  6. Sprinkle the cheese and grill in a hot over at 200 degreesC for 10 minutes
  7. Serve hot

MUSHROOM AND TOMATO PIZZA





Ingredients 

  • Mushrooms   - 100gm
  • Tomatoes      - 100gm
  • Capsicum      - 50gm
  • Pizza dough for 4 bases
  • Tomato Sauce - 180gm
  • Onions          - 50gms
  • Mozzerella Cheese - 400gm
  • Olive Oil - 10gm
  • Oregano - a pinch
  • olive oil for sprinkle. 
  • Salt and pepper - to taste

Method

   Serves - 4
   preperation time - 1:25 hours


  1. Pre heat oven to 220C (425F)
  2. Remove the earthy stalks, wash and slice mushrooms
  3. Wash, remove eyes and cut tomatoes into roundels.
  4. Remove stems, halve, diced, cut capsicum into juliennes.
  5. Peel wash and cut onions into roundels.
  6. Halve the stuffed olive vertically
  7. grease 4x30cm pizza trays
  8. Bake for 15 - 20 minutes.

HOW TO CUT ONIONS WITHOUT CRYING

This information is to help all those people who cry a lot, while chopping onions. Want that to stop? try the following tips.



  • Before chopping the onion, keep them in the refrigerator for about 10 mins. This makes them cold and crisp, and when onions are cold, the juice does not hurt your eyes
  • Light a candle next to the work area, before you begin to slice onions. The gas that makes the eyes water, will burn off before they reach your eyes.
  • Cut them underwater, this way the gas wont come to your eyes (not adviced, as it may clear away juices)
  • Wear protective eye gear, I mean why not? (use swimming goggles if you want)
  • Chop off the root end and toss it before you start dicing, that part has the irritants, remove skin and then start chopping.
  • Do not keep the onions close to your eyes.
  • If you use a sharp knife, there should not be any tears. Blunt knives usually crush the onion and excrete more juices than a sharp knife.
  • Try holding a wooden spoon, or piece of bread between your teeth while cutting. This significantly reduces eye irritation.
  • Chewing gums.. its a lot like smoking, its like diverting your mind.(doesnt work that well though)
