
another delicacy for the vegetarians
Ingredients -
batter
- maida - 1 cup;
- water - 2 cups
- salt - 1tsp
- bicarbonate soda - pinch
- breadcrumbs
- ghee for frying
filling -
- grated red pumpkin - 250gm
- large onion - 1
- chopped green coriander - 1tbsp
- grated coconut - 2 tbsp
- lime juice - 2 tbsp
- salt to taste
- oil - 50ml
grind together -
- green chillies - 6
- ginger - 1 piece
- garlic - 1 piece
- cloves - 2
- haldi/turmeric - 1/2 tsp
- methi seeds - 1 tsp
- cumin seed - 1/2 tsp
- coriander - 1/2 tsp
METHOD
- sift maida,salt and soda bicarb together and make into a batter with water
- strain through a soup strainer, (elimanitating lumps)
- keep batter aside
filling-
-heat oil in a kadhai and fry sliced onions till golden brown.
-add masala paste and fry for a while before adding grated pumpkin, coconut, lime juice and salt
- cover and cook over low heat till pumpkin is done,
- raise heat and cook while stirring constantly, till well fried on each side
- mix in chopped green coriander,
- remove from pan and cool.
- take a frying pan and heat a little oil/ghee in it
- now make a small pancake(4" diameter) using a large spoonful of the batter
- put 2 tsp of filling on one side of the pancake
- fold over the filling , then turn in both sides and roll slightly.
- continue making rolls till all of the filling is used, a little batter would be left over.
- heat ghee in a kadhai, dip the leftover batter after rolling it over bread crumbs,
-fry till golden brown
- serve with green chutney or ketchup,
these rolls can be made before hand and kept in the fridge, before serving dip in butter, roll in bread crumbs and fry
